Hope you’re all staying safe in the midst of these unprecedented times. This quarantine has left me bored, but safe inside my home. I’ve been cooking a lot more and trying new recipes like the one I want to share with you today.
I found this Avocado Salmon Rice Bowl recipe on Pinterest and decided to give it a try because it is looked delicious! The recipe is broken down into three parts and explains how to cook the rice, the salmon, and season the avocado. I followed the recipe, but not exactly, so a few things might be different. As usual, I try to measure everything by the eye and use measurements as a guide.
Salmon
Garlic, Honey, Lemon, Cilantro, Salt, Pepper, Onion Powder
I added the above ingredients to the salmon, wrapped it foil, and popped it in the oven for 20 minutes.
Rice
I cheated and used jasmine rice that you heat in the microwave for two minutes. I added a little bit of butter and it was just as good.
Avocado
Chili Powder, Salt, Cilantro
I cut the avocado into squares and mixed it in a bowl with the other ingredients. Note: Go light on the salt. Make sure you don’t mash the avocados too much where it become a guacamole texture. You want to be able to keep the shape as much as possible.
Below is a video for those that are visual learners! This is the best meal I’ve made in a while and so different than what I normally eat. Spending a few extra dollars on salmon every once in a while is worth it, but if you’re like me, you’re great at catching a sale. I made this meal for lunch and it was so filling. I even had leftovers for the next day.
